Road Trip!

Tomorrow afternoon, we'll be leaving work early and heading to Pullman for Homecoming - first time back in three years!! I would prefer my Pullman fix to happen more often, but I'll take what I can get. We're loading up the Cougar trailer, for it's maiden voyage, and heading off for the beautiful wheat fields of the Palouse. I think most WSU alumni will agree with me when I say that the feeling of going back to Pullman is so incredibly nostalgic that it brings a smile to my face - there's just something about the fresh air and scenary in Pullman that make me happy.

These two will fabulous Cougs (Jeremy and Marge) will be driving over and bunking up with us in the RinaCamper.

This is the last time we were in Pullman together...as the photo illustrates it was slightly ridiculous as Steve ended up in bed at Sigma Nu's around 5pm.

Current Favorite Snack..

Popchips are an all-natural chip like you've never experienced before. They're not fried (unhealthy) or baked (killer stomach ache). The creators of popchips take the whole potatoe, apply heat, pressure, and pop - it's a chip. Chips have always been a downfall for me...ever since I started snacking (eating a bag of this or that) after school in jr. high while watching the Rosie show...but I've digressed. Popchips uses a blend of natural seasonings (I'm a huge fan of just about anything seasoned) for a snack so tasty, crispy and dip-able, you won't even notice it's healthier. And we're always looking for healthier snacks, right?

And I can't do a snack post without going back to a previous post regarding the ridiculously noisy SunChips bag...check out this video done by the Wall Street Journal today {thanks for the tip Al!}. So, apparently, I'm not the only crazy one with sensitive ears that could probably sue for hearing loss.

* Random Ramblings

Pretty sure I've mentioned before that I'm somewhat of an old soul when it comes to music. I could listen to 60's/70's/80's rock all day, any day and never get sick of it. Currently, I'm on a Bruce Hornsby kick. Not sure what it is about Bruce, but his music has a warm weather feel to me - Biggie, Dre and Snoop are good options too, just a bit different from Bruce. Also hooked on Dire Straits (my father-in-laws favorite) and America (my dad's favorite) and of course I'm always in a Fleetwood/Stevie mood, but that's year-round...duh. Also, slightly obsessed with Katy Perry's new song "Teenage Dream."

Has anyone tried Sun Chips? Stupid question, BUT have any of you ever tried Sun Chips in their new "Compostable Packaging"? I'm all about going green, but Oh.My.Goodness, if you purchase a bag of these, be prepared for possible hearing loss. Consider yourself warned. I realize I have sensitive ears (maybe that's why I talk so loud), but this bag is so loud and obnoxious that I will never buy a bag again, which is probably a good thing because I shouldn't be indulging in chips anyway...speaking of, I bought a new flavor of chips last night at Target - General Tso's...I have zero self control.

Did ya know Blue Moon and Fat Tire can be found in a can?? Apparently, it's the little things that excite me as I was ecstatic to test out both. They're good, but I still prefer beer from a tap. Hopefully, the Coors Brewery will be doing some good samples during our tour tomorrow in Golden, CO.

Steve and I are off on a Colorado adventure tomorrow to explore this gorgeous state and shoot a wedding...SEA → Denver → Golden → Breckenridge → Boulder. We're so excited as this will be the first time to CO for both of us.

Chocolate Bars, Cookies and Chips...

...have been taken to an entirely new level

From reading the comments on my Costco post, it seems that I led people a bit astray. We make our best efforts to eat healthy, but not everything we purchase is in line with veggie crunchers and dried blueberries, as Steve has the sweet tooth and I sometimes prefer the salty {less healthy} snacks.

Steve bought the Ramen Noodle Komforte Chockolate by Seattle Chocolates on Sunday night and I have yet to test it out, but according to him, it was "good" hmmmm I guess he didn't love it, but I know he didn't hate it because there was another bite from the bar this morning. Salted chocolates are a favorite of mine, so I'm thinking I might prefer the Tortiall Lime + Salt flavor the best.

I rarely eat McDonalds and couldn't tell you the last time I had one of their cheeseburgers, but the taste of a McDonalds cheeseburger (whether you like them or not), is one that is quite distinct and recognizable when it comes to the world of burgers. With that said, the new 'Late Night all nighter Cheeseburger Doritos' taste EXACTLY like a McDonalds cheeseburger - like in a blind taste test I might not be able to tell the difference...well, maybe I could, but you get my point. The pickles, the bun, the cheese, the ketchup, the beef - it's all there. If you're a chip lover, like myself, I say give them a shot - they're not that bad. Now, if you're my friend Michelle, who has NEVER had a McDonalds cheeseburger in her life, you wouldn't know the difference. She became partial to the chicken mcnuggets (moreso than the average child) as a kid and has never regretted this decision.

And finally...As part of 25th Anniversary of the Dairy Queen Blizzard, DQ and Kraft Foods have launched a Limited Edition Oreo Blizzard Cookie. Seriously, did people shopping the cookie aisle need one more option to choose from??? As with any new treat, Steve bought a bag {ahhhh maybe two}. They taste almost exactly the same as the original Oreo with a creamier middle - if I'm in desperate need of a DQ treat, I think I'll stick with the original Blizzard

It's a Love/Hate Relationship...

with Costco

Love because the prices are unbeatable and the products superb.

Hate when Steve shops alone and comes home with way more than needed...and of course, there are always a few unnecessary products.

I married into a family that is quite possibly more in love with Costco than with me (just kidding Mo...I know you love me more than the biscotti)

Here are a few of my current favorites...

1. Blue Diamond Almonds - Bold Habanero BBQ: If you've been to my house in the past month you've probably been forced to taste test these goodies - best.flavored.almonds.ever (probably not the healthiest, but definitely a good treat)

2. SunPix - Hearts of Palm: Currently, my favorite salad accessory

3. Veggie Crunchers: Great little snack - but don't eat them too fast or too many at a time as they're a bit starchy and may cause heartburn.

4. Kirkland Signature - Whole Dried Blueberries: Perfect to eat along or on top of vanilla ice cream

5. Bom Dia - Acai Berry juices: If you're not already on teh Acai kick, try out this sweet drink - excellent source of antioxidants

6. Kirkland Signature - Bath Tissue: 36 individually wrapped rolls for $21! Probably the best deal at Costco.

7. ECOS - Laundry Detergent: Been using this for about 3 years now and love it! Earth friendly, smells great and most importantly gets the stains out of Steve's work jeans.

8. Mini Bell Peppers: Easy to pack for lunch and the perfect healthy snack.

9. Brothers-All-Natural Crisps: Perfect on-the-go snack for adults and kids. The variety pack includes Fiji apples, strawberry/banana combo and pears.

:: MOD crazy ::

Have you had the pleasure of trying MOD Pizza yet?

Michelle and I try to meet for lunch once a week and so far our favorite spot is MOD Pizza on Bellevue Way across from the new Safeway. The pizza's are handmade (in record time...I think) and 'made on demand' (acronym: MOD). If you don't want one of the pizza's off the menu, you can build your own for only $5.88 - steal of a deal! Be sure to try out the garlic knots too - they're excellent dipped in marinara.
The only pizza that I have tried out, so far, is the Caspian (I'm partially obsessed with BBQ chicken pizza) and it is delicious.
If you don't come to Bellevue often, check out the downtown Seattle and U-District locations.

*tis the Season

For dark chocolates and peppermint candies...

I was motivated, after reading JOAT's recommendation for the Peppermint Crunch Junior Mints, to share a few of my personal favorite holiday treats. I love any treat that includes peppermint bark.

In my mind, Williams-Sonoma peppermint bark is probably the most famous and I'd take a lucky guess to assume that it's one of their most popular sold holiday candies of the season. Excellent stocking stuffer or hostess gift.

My mother-in-law keeps a candy dish in the kitchen so whenever we stop by, we usually come home with a few treats. The other night Steve came home with a few of these - DEEEE-LICIOUS!

Pretzels are one of my very favorite snack foods, especially when they're flavored, so last week, I found this tasty morsel at Whole Foods and figured it was a must have - zero regrets...other than not buying more than one bag. As with most peppermint flavored treats, they're a limited edition product so be sure to stock up.

Ghiradelli chocolates are some of the most famous chocolates around - of course they would have a peppermint chocolate and of course it would be wonderful Something I did not know is that they also make an eggnog chocolate { Lynds - me.you.must.try } and pecan pie chocolate, which is included in the assortment of holiday chocolates, available at Amazon.com

Seafood Lovers Delight :: Cioppino

One of my goals of 2009, was to test out new recipes - well, last night I did just that. I made something for the very first time and received an excellent review. And not to toot my own horn, but it was one of the best seafood dishes I've ever had.

There is a bit of a story behind this choice for a meal. A couple of weeks ago, I took advantage of the Southwest Airlines 3-day sale and purchased tickets to San Francisco for Steve and I as his birthday present. I wasn't going to tell him about this gift until we celebrated his birthday in Maui, since it's three days after the wedding, but I slipped and forwarded him an email in which I had explained to a friend that we were heading to the Bay Area at the end of April for a few nights. That said, I figured a San Francisco style dinner was in need, so I immediately contacted the best amateaur chef, that I know, in San Francisco, my dear friend Jackie and asked what the best San Francisco themed dinner recipe she had. She immediately suggested Cioppino and I began working out my Whole Foods shopping list.

The recipe Jackie suggested came from All Recipes. I did some further research and made a few tweaks from other recipes I found.
3 tbsp butter
Half of a large onion chopped
3 cloves of garlic
1 can of stewed tomatoes
1 large can of crushed tomatoes (~2 cups)
1 can of chicken broth
1/2 cup clam juice
4 bay leaves
2 tbsp dried basil*
1 tbsp dried thyme
1 tbsp dried oregano
1/2 cup red wine
1/2 lb peeled and deveined large shrimp
1/2 lb cod, cubed
1/4 lb bay scallops
1 lb small clams
1/4 lb calamari, cut into small rings
1/4 lb crabmeat - ask the Seafood specialist for the largest pieces.

* All seasonings were purchased in the Whole Foods seasoning section - very chep way to go. I suggest the seasoning serving size to be based on taste - so, add a little and test it out.

1. Over medium-low heat melt butter in a large stockpot, add onions and garlic. Cook slowly, stirring occasionally until onions are soft.
2. Add tomatoes to the pot (break them into chunks as you add them). Add chicken broth, bay leaves, basil, thyme, oregano and wine. Mix well. Cover and simmer 30 minutes.
3. Stir in the shrimp, cod, scallops, clams, calamari and crabmeat. Bring to boil. Lower heat, cover and simmer 5 to 7 minutes until clams open. Ladle soup into bowls and serve with warm sourdough bread!

The total time this took from start to finish was about an hour. The most time consuming part was probably the trip to Whole Foods, which I didn't mind at all.

With the leftovers, we plan on having it over linguini this weekend.

Wedding Cupcakes

Why cupcakes instead of a wedding cake? First, who doesn't love a cupcake? Utensils not necessary and the perfect amount of deliciousness. Better question - who doesn't love a cupcake made by our dear friend and renowned baker Jamie? For those of you that have never had the pleasure of enjoying one of Jamie's cupcakes, you are missing out. Secondly, after receiving a quote from our wedding planner for a wedding cake on Maui (after picking my jaw up off the floor) I just could not justify the cost on a cake for the price she gave me. I also quickly realized that our guests would appreciate and enjoy a cupcake made by Jamie more than any cake a so-called professional would whip up for us. With all of that said, we are so thankful to Jamie for agreeing to make our cupcakes. Below are a few images of cupcakes that Jamie has made for previous events. The 80's cake toppers were a huge hit at our friend Michelle's 80's prom themed birthday party this year. The cupcakes with the gold coins were made for Steve's pirate themed birthday party and the #30 toppers were made for our friend Mike's 30th birthday party. Each of the toppers were creativey made by Jamie as well. Not only are the cupcakes appealing to the eye, but are mouthwatering as well. If you're thinking you want cupcakes for your next event, don't think twice about it, you should definitely contact Jamie.

What exemplifies Hawaii more than their beautiful flowers? In my opinion, nothing! Hence, one of the reasons most tourists are welcomed to the tropical islands with leis. The first flower that comes to my mind when I think of Hawaii is the orchid. Therefore, I love the idea of real orchids as the toppers for each cupcake at our wedding.
